This work aims to motivate the research community, new agricultural professionals and a large number of producers in search of innovative alternatives and the industrialization of yacon. Through some experiences of agricultural production, adaptability and ease of handling, this plant demonstrates its potential as a functional food and its possibilities of use in animal nutrition, which can make a great contribution to the Andean rural sector.
